Scrambled Omelette

Not patient enough to make an omelette, but crave the taste? Here's the compromise- and it's healthy too!

  • 2 small (4 oz each) potatoes (opt)

Scrub thoroughly and pierce each potato with a fork. Microwave on high for 7 minutes. ( If you prefer your omelette without potatoes, then skip this step.)

  • 1/2 green bell pepper, seeded and chopped
  • 1 small onion, chopped

Chop green bell pepper and onion (or save time and use pre-prepped frozen!)

  • 2 Homemade Turkey Sausage patties
  • or 4 slices Canadian bacon, chopped (opt)

Spray a large nonstick skillet with cooking spray. Saute onion and pepper with sausage over medium-high heat. Break sausage patties into chunks. When potatoes finish, chop and add to saute.

  • 2 English muffins or 4 slices whole-wheat toast

Put in toaster

  • 4 lg whole eggs
  • 6 lg egg whites (yes, throw those yolks away!)
  • 1/4 cup skim milk

In a medium bowl, whip together with a fork. Add to saute and stir constantly.

  • 1 tomato, chopped
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 15 grinds fresh ground pepper

Fold in when eggs are almost completely done. Turn off heat, cover and let set for 1 minute.

Top with ground pepper. Serve with English muffins or toast and cantaloupe.

Note: If not using meat, you may wish to sprinkle on 1/4 tsp salt.

Delegate someone to: chop onion, green peppers and tomato; slice and peel cantaloupe; make toast.
