Great Northern Tuna Salad Stuffer

Quickly mix this up for a delicious pita pocket stuffer, flour tortilla roll-up, or on top of a tomato or bed of salad greens. Friends will rave!

  • 1 lg can (12 oz) water packed tuna, drained
  • 2 cans (15 oz each) Great Northern beans, rinsed & drained

Toss together in medium bowl.

  • 1/2 tsp dill weed
  • 1/3 cup light Thousand Island dressing

Add and mix gently.

  • 1 green onion, chopped (opt)
  • 1 red bell pepper, chopped (opt)
  • 1/2 cup fresh parsley, chopped (opt)

Add if you have time.

Serve 3/4 cup stuffed into 2 pita halves, rolled in a flour tortilla, placed on top of a tomato or salad greens, or simply eat with low-fat, whole-wheat crackers.

Keeps in the refrigerator for 4 days. Use for lunches all week.
