The next time you find yourself with 2 cups of leftover plain rice, turn it into this! Not only does it make a delicious breakfast, but also a delight for the lunch box, picnic basket, or dessert table.
Great way to use leftover cooked rice.
- 2 cans (8 oz each) pineapple tidbits, in it's own juice
- 1 can (15 oz) Mandarin oranges
Open cans and drain. Reserve pineapple juice for another use. Place in large bowl.
- 2 cups cooked brown rice, chilled
- 1/2 cup chopped walnuts, pecans or almonds
- 1/4 cup oat bran (dry, uncooked)
- 2 cups seedless red grapes, washed well, patted dry
- 1/2 cup raisins or chopped dried apicots
- 1 container (8 oz) strawberry nonfat yogurt*
- dash cinnamon and nutmeg (opt)
Add and mix gently.
Serve now or later. Will keep in refrigerator, covered, for 2 days.
*If all you have is plain nonfat yogurt, simply stir in 2 T strawberry jam or preserves to 1 cup plain yogurt. Other flavors, like raspberry and peach, work great as well.
